2012 Silver Tray Award Winners

Participants were judged in five categories; appetizer, entrée, dessert, beer and wine. First place winners received the coveted "Silver Tray" award, distinguishing them as the best of the best. Winners for the 2012 Gala were:

Best Table Presentation

Appetizer

  • 1st – Fresco, Madison

     Executive Chef John Jerabek

     Seared Scallop with a bacon, basil & mint pea puree.
     Served with calamansi lime vinegar.

  • 2nd - Le Personal Chef, Madison

     Executive Chef Sami Fgaier

     Moules Frites prepared with fresh Prince Edward Islands  mussels cooked in a saffron cognac cream sauce with    hand-cut Pommes Frites. Served with Harissa aioli.

  • 3rd - Fresh Madison Market, Madison

     Executive Chef Andy Nighbor

     Burata cheese lobster.

Entrée

  • 1st – Kaminski Bros. Chophouse, Wisconsin Dells

     Executive Chef Dennis Matteson

     Roasted, marinated rack of lamb (hand carved) with loaded  KBC mashed potatoes and assorted sauces.

  • 2nd – Fresh Madison Market, Madison

     Executive Chef Andy Nighbor

     Apple and fig stuffed pheasant breast, bacon-wrapped  haricot verts, celeriac puree, Bing cherry demi sauce.

  • 3rd – Johnny Delmonico's, Madison

     Executive Chef Eric Benedict

     Seared scallops, truffled oxtail ragout, parisienne gnocci,  shaved horseradish.

Dessert

  • 1st – Ostera Design, Janesville

     Pastry Artist Aryll Pullum

     Hand-rolled cake balls that are dipped in a candy coating and  finished individually within a uniquely inspired collection.

  • 2nd - Osteria Papavero, Madison

     Chef Francesco Mangano

     Vanilla panna cotta with wild berry sauce.

  • 3rd - La Mestiza Mexican Cuisine, Madison

     Owner Antonio Estrada

     Nevado de Chocolate (flourless chocolate cake).
